I have found the perfect quick and easy dinner recipe that will impress anyone. Earlier this summer a friend of mine served Chicken Pesto Pasta for dinner one night and I had to ask her for the recipe. I was amazed at how simple it was to make and how delicious it was! I tweaked her recipe some by adding some tomatoes and red pepper flakes, so feel free to add anything you like to spice it up!
What you’ll need:
10oz Boneless and Skinless Chicken Breast
Olive oil
Salt and Pepper to taste
1 tsp Red Pepper Flakes
1 cup Linguine Pasta
1 cup Cherry Tomatoes (halved)
Gourmet Pesto Sauce
1/2 cup Parmesan Cheese
I prepped the chicken breasts by coating them with olive oil, salt, pepper, and some red pepper flakes. Season the chicken to your liking and feel free to add any other spices you like.
Fill a pot with water and set it to boil. Once boiling place the linguine or any pasta of your choice into the water and cook till al dente. Check the pasta’s package for more precise cooking instructions.
Place the chicken breasts into a skillet on medium heat and cook on one side for about 5 minutes and then flip to cook the other side for another 5 minutes. The cooking time will vary with the thickness of the chicken breasts. I used thinner breasts so you may need to cook yours longer the thicker they are.
Once the chicken is finished cooking set it aside for a minute to rest and then slice it up into smaller pieces.
Drain the pasta once its finished cooking and place it into a big bowl. Combine the chicken, tomatoes, pasta, and pesto sauce all together in the bowl so that everything is coated with the sauce. Add parmesan cheese shavings on top to garnish and voilà you’re done!
Looking at this dish no one will believe how simple it is to make. This would be great to make for a date night or dinner party to impress your friends. You can make it your own by adding other ingredients like olives, roasted red peppers, broccoli, etc. You can also make it healthier by switching out the pasta for zucchini noodles or spaghetti squash.
